Sunshine and Homemade Ice-Cream

Can you believe this wonderful sunshine? We are having positively balmy weather here in Wexford. Yes, I did say the words balmy and Wexford in the same sentence. I’m not on the costa del abroad, honestly! Mind you, when the weather is like this, I really wouldn’t chose to be anywhere else.
Now I’m aware by saying this aloud, the heavens will probably open up any minute now, but I’ll risk it because I want to share with you a fantastic recipe I’ve just used for Quick Ice-cream that is now going to be a favourite in the H house, balmy weather or no!

This is one of my favourite blogs to follow and I am constantly licking my lips at the delights she produces in her kitchen.

The little H’s were very excited to make our own ice-cream and I was even more excited that the recipe only called for two ingredients! I chose strawberries as my fruit of choice, after all we do live in Wexford, home to the most luscious strawberries.

I think they were both also a bit bemused at how I could magic these two packets into the much promised Ice-Cream.

But very soon we had whisked our way to this

Which we put in little ramekins and then into the freezer ready for Daddy’s arrival home.

But not before Amelia had a quick sample, just to make sure the batch was good!

And the verdict? Easy and inexpensive to make, fun for the children and absolutely delightful to eat!
I’m thinking I might try a banana and caramel version next.
